Easy Chicken Dinner

Here is what I’m eating these days. Knowing I have leaky gut and want to lose weight with a low thyroid, the odds are stacked against me.

I’ve been very careful in what I eat. I’m not eating perfectly, but am at 98% “eating clean” and am paying attention to the benefits for some, to go gluten free.

This is a chicken thigh cooked on top of the stove in coconut oil, with organic brown rice for the carbohydrates which we should have some, aged parmesan cheese for the flavor I love, Bragg liquid amino, spinach and my usual spices: turmeric, sea salt, pepper, ginger, parsley, and oregano. Those are the basics I use almost exclusively.
